Baked Eggs is What’s for Dinner!

I like to go meatless at least once a week (though I don’t always get to) and recently, I decided to make baked eggs.  This would also make an amazing New Year’s Day brunch dish (if you’re still looking for ideas).

Baked Eggs

Ingredients:

  • 4 egg whites + 2 whole eggs (large)
  • A little more than 1/4 cups of milk
  • 1/3 cups of shredded cheese (I used an Asiago, Parmesan and Romano blend), divided
  • 4 slices of tomatoes
  • 1 cup of chopped onions
  • 2 tsp black pepper
  • 3 tbsp each of oregano and basil

 

Directions:

  • Line the bottom of the baking dish with the onions and tomatoes
  • Sprinkle half of the cheese over the vegetables
  • Whisk the eggs, milk, herbs and black pepper together
  • Add the egg mixture to the baking dish and top with the remaining cheese
  • Place in the oven and bake at 375 until the eggs set, about 20-25 minutes

Serve with crusty bread and a green salad.
