Healthier Eating with Steamed Stuff Peppers

Now that 2011 has arrived, many of us are trying to follow our New Year’s resolutions and for a great deal of people, it means living a healthier lifestyle.  One way to do this is by making less fattening meals such as by steaming.  One of my favourites is to steam stuffed peppers, an easy recipe that doesn’t require too many ingredients nor does it take too much time to prepare and is absolutely amazing.  For two, you will need:

  • 2 Bell peppers (any colour)
  • 1/2 pounds of lean ground beef or turkey
  • 1 to 2 teaspoons of minced garlic
  • 1 tablespoon of soya sauce or terriyaki sauce
  • 3/4 cups of chopped green onions (optional)

1. Marinate the meat in a mixture of garlic, soya/terriyaki sauce and optional green onions for at least one hour

2. Cut the peppers in half from the top

3. Stuff each half with the meat and place in steaming tray or basket over boiling water or in a steamer.

The peppers should be steamed for approximately 15-25 minutes, depending on the meat you use.  Be careful when taking them out of the tray or basket, as the peppers are going to be very soft and can break easily.  Serve with steamed brown rice or rice pilaf and steamed vegetables.
